today was shrove tuesday (the day before ash wednesday – the beginning of lent). it’s a long held family tradition that i make pancakes for the family on shrove tuesday. and tonight i did just that.
last night i looked for a gluten free recipe and found, amongst all the fancy schmancy ones, a nice easy recipe which could be adapted to use gluten free flour. the recipe can be found on best recipes.
ingredients
1 cup self-raising flour
1 cup milk
1 egg
method
1) preheat a large non-stick fry pan.
2) place all ingredients into a bowl and mix until just combined.
3) lightly grease the pan with butter or cooking spray. (i used butter.)
4) cook large spoonfuls of batter until bubbles burst on the surface and the edges start to go dry. (i used 3 tablespoons of batter per pancake.)
5) turn and cook other side until golden brown.
i made 8 pancakes with the first batch. because it took next to no time to prepare the batter i had no qualms about making a second batch of 8 pancakes.
as soon as i took them out of the fry pan, i spread the pancakes with strawberry jam and rolled them.
note: this recipe also makes great pikelets and it freezes and reheats in the microwave extremely well. it works great with all the usual sweet toppings and equally well with savoury toppings like leftover bolognese sauce or savoury mince and cheese.
so simple. who needs the pre-made mix? and the recipe is easy to remember.
i had 2 of the pancakes tonight – they were light and fluffy.
i savoured every bit of the sweetness because from tomorrow (for lent) i’m giving up all things sweet. my sweet tooth will thank me later for it – i hope! it’s going to be the longest 40 days …
