chocolate banoffee pie – with gluten free biscuit base …

you may remember that earlier this month i made a chocolate banoffee pie.  a variation of my all time favourite dessert – caramel banana pie.  it was that simple to make that, on a spur-of-the-moment whim, i made it again.

last monday my aunt went to my mum’s house for lunch.  [my mum had decided to make lunch for her sister (my auntie cathy) for her birthday.  because i had the day off from work (lucky me) i decided to gate crash their lunch and bring the dessert].  i decided to make the banoffee pie gluten free.

to do this, i replaced the mcvitie’s digestive biscuits with gluten free, wheat free, nut free and dairy free freedom crunchy coconut biscuits.

i whipped this baby up in no time!  and the biscuit base was perfectly well shaped.

but …

and, before i go high fiving myself, in the excitement and joie de vivre of making this little beauty, i forgot that the flake and picnic chocolate bars were not gluten free.  doh!  not to worry, my mum was able to have a piece by scraping off the ‘naughty’ bits.  next time i’ll grate a block of cadbury dairy milk chocolate to decorate the top.
