raw double layer chocolate fudge with cacao nibs …

this is healthy no-guilt eating at its best! thanks to gourmande in the kitchen – this recipe is “an easy no-cook raw fudge that’s topped with a layer of rich chocolate ganache and cacao nibs for extra crunch.”

pure indulgence …

ingredients
for the fudge base –
2 cups / 224g raw organic cashews
2 cups / 240g unsweetened organic shredded coconut
240g very soft medjool pitted dates
1 cup / 100g raw organic cacao powder
1/2 cup / 120ml organic maple syrup
pinch of fine sea salt

for the ganache –
1/2 cup / 120ml organic maple syrup
1/4 cup / 60g extra virgin unrefined coconut oil
1/2 cup / 50g raw organic cacao powder
pinch of fine sea salt
1/4 cup / 30g raw cacao nibs

method
the fudge base –
1) place cashews in food processor and grind until very finely ground (be careful to not over process the nuts into butter).

2) add the shredded coconut and process until well combined and fine in texture.

3) add the pitted dates and process until a soft paste forms.

4) add the cacao powder and process again.

5) add the maple syrup and a pinch of salt and process to combine until a creamy texture is achieved scraping down the sides as needed.

6) press firmly into a square or rectangular pan lined with baking paper.

7) place in fridge while making the ganache topping.

the ganache –
1) blend together the maple syrup and coconut oil, in the food processor, until well combined.

2) add the cacao powder and a pinch of salt and process until smooth, scraping down the sides as needed.

3) pour the ganache over the fudge base and spread evenly over the top.

4) sprinkle with cacao nibs and return pan to fridge to set and firm for at least one hour. (note: i didn’t have any cacao nibs.)
5) cut into squares and serve the fudge cold. keep leftovers in an airtight container in the fridge.

oh.my.goodness! who knew that raw could taste this delicious? my taste buds went into meltdown!

this recipe is fast, super_easy and, most importantly, healthy. the layer of fudge is moist and chewy and the ganache layer is smooth. even with the inclusion of the pitted dates and the maple syrup, the fudge is not overly sweet. who needs sugar anyways? needless to say but my sweet tooth was fairly satisfied ;)

it was a pleasure to make this sweet – the aroma of the fudge hung in the air and sucked me right in – i was in chocolate heaven.

‘delicious’ and ‘outstanding’ were the words used by my brother and sister-in-law. my other brother said “nice. good job man.”

‘decadent’ and ‘sinful’ can also be used to describe this dessert.
