coconut cranberry raw bars …

what are delicious, raw, vegan, gluten free and healthy? coconut cranberry raw bars. they are 100% all natural and very nutritious. the nuts provide the protein and the dash of sweetness comes from the dried fruit.

such a simple recipe with only six ingredients. 20 minutes of your time is all you need. and … no baking!

1/2 cup almonds
1/2 cup cashews
1 cup dates
1/2 cup dried cranberries
1 cup shredded coconut
2 tablespoons coconut oil

1) in a food processor combine the nuts, dates, and cranberries. process until the dough is sticky and the pieces of nuts and fruit are all similar sized pieces.

2) add coconut oil and process to combine.

3) add the shredded coconut and pulse just until combined. be careful not to over process.

4) shape into equal sized bars, or roll into bite sized balls and wrap in baking paper or plastic wrap. i decided to press the mixture into a baking tray lined with baking paper.

i took the tray out of the refrigerator after a couple of hours and cut into slices. i tried a small piece – niiiiice. i reckon they’d be much nicer after they have been in the refrigerator overnight.

note: these raw bars should keep in the refrigerator or freezer in an airtight container for up to a month.
